Only two persons can prepare 600 kg rice. Only one machine alone can make steamed bread and even put them in plates, dishes are prepared, cooked, and served by special persons, like an assembly line… This is the Central Kitchen Project of Qinjiawei Restaurant in Haigang District.
“It is still under trial operation. At present, the daily meal supply is about 8,000, mainly for the enterprises and institutions in Qinhuangdao City, as well as some colleges and universities. The overall operation is very good.” said Liang Shuang, general manager of Qinjiawei Central Kitchen, adding that the central kitchen was designed with a daily dining capacity of 80,000 people. In the future, the overall group meal distribution of Haigang District and even surrounding counties will be the main pillar; at the same time, they focus on clean vegetables in response to the excessive pesticide residues in food ingredients. “In the next step, we will promote our clean vegetables in supermarkets, communities and our stores.” Liang said.
Qinjiawei Central Kitchen started trial operation in October 2020, with a total area of 30 mu and a total investment of 120 million yuan. The production workshop was constructed in accordance with the national food and pharmaceutical industry standards, covering an area of 15,000 square meters, providing services such as clean vegetable processing, student and elderly nutrition meals, meals for enterprises and institutions, cold chain catering, meals for large-scale conferences, emergency catering, and canteen management, etc. It is estimated that 10,000 tons of clean vegetables will be processed throughout the year, and 10,000 tons of barreled and boxed meals will be produced, with an annual output value of about 400 million yuan.
The central kitchen is composed of pre-processing area, staple food processing area, ingredient processing area, cooking area, distributing area, and disinfecting area. With the highly automated and smarter assembly line, the sand, worms and pot slag attached on vegetables can be quickly filtered and discharged, after that, starch and impurities will be removed, and dehydration will be carried out; the bone cuts processed by the bone saw are neat and free of dregs, which not only saves labor costs, but also improves the efficiency and quality of meals in some links.
Qinjiawei Central Kitchen always puts safety, nutrition, and health in the first place, adopting centralized control mode of “unified procurement, testing, processing, production, and distribution” to ensure food safety and traceability throughout the process.
Intelligent and standardized likes such as systems of water purification, ventilation, disinfection, face recognition, 100,000-level dust-free purification workshops, and full temperature control make the production area free of bacteria and dust. Food materials are not used unless they have past quick inspection. Detection of agricultural residue, lean meat essence, and aging grain are necessary. The infrared body temperature detector and automatic disinfection air shower dust removal devices are installed at the employee entrance. None is accessible unless they have completed the procedure, to ensure the production process aseptic and clean.
Nutrition, health, and deliciousness are important requirements of the common people for catering, which are also important goals of Qinjiawei Central Kitchen. The pre-treatment of the dishes prevents nutrient loss to the greatest extent; the dishes are in accordance with the standardized menu established by the R&D department, different chef is responsible for different dishes to ensure the special tastes; the rice is cooked in an antique method with open flame, so that the bottom of the pot is heated to even temperature, which ensures the taste, reduces the moisture in the rice, and good to health; the salt content of the dishes is tested according to national standards for the salt and protein intake of primary and secondary school students, to ensure that the food has more nutrition and less oil and salt.
